Peanut Butter Blossoms

Nursing my earache I did a little baking last night…. Peanut Butter Blossoms. YummY!

Can’t you just taste them now? Oh and I need not mention the yummy smell of peanut butter and chocolate……..Ahhhhhh! This is the easiest recipe I have ever used for peanut butter cookies!
Please let me share it with you…..

Easy Peanut Butter Cookies
1~ 14 oz can Eagle Brand Sweetened Condensed Milk
¾ cup smooth peanut butter
2 cups biscuit baking mix, I used Bisquick
1 tsp. vanilla
Sugar to roll dough in

Preheat oven to 375 degrees
Beat condensed milk and peanut butter together until smooth. Add biscuit mix and vanilla. I use my dough hook on my mixer for this because it is really thick. Mix well. Shape into 1” balls. Roll in sugar. Place 2” apart on parchment paper lined cookie sheet. Flatten with fork. Bake 6-8 minutes. Do NOT over bake! Cool.
Now for the chocolate kissy touch:
Shape and roll in sugar as above but do NOT flatten. Bake as above. Press chocolate kisses in center of each ball immediately after baking. Allow to cool before touching the kisses….this will take a little while!

Today I will be making a Raspberry Cream Cheese Coffee Cake…..now I’m not one for raspberry *not my fave* but this my friends is delish! I had it at a wedding shower, its not only tasty it’s really pleasing to the eye too.
In the morning I’m going to attempt to make homemade pretzels!
Then off to the family Christmas gathering we go, food in tow……..

I do hope you are feeling better! It certainly hasn't hindered your baking abilities, you seem to be cooking up a storm! Your cookies look so yummy and that raspberry cake sounds delish. I AM a raspberry fan so this could be right up my alley. Enjoy your Christmas celebrations and feel much better soon!

SO glad you're feeling better! Just gotta LOVE peanut butter blossoms. They look so yummy! I was going to make some this year but came across a recipe for chocolate candy cane cookies. It's almost like a cake batter consistency. You shape the dough into candy canes. When they're cool you drizzle white chocolate on them and then cover with crushed peppermints. We'll see if they turn out. Haha!
