I love to share….sharing is giving. I love giving. So this I give to you: joy, peace, warmth, good cheer, happiness and more of anything that you need.
I also give you this recipe because you asked and because I love to share what I have.
Raspberry Cream Cheese Coffee Cake
2 ½ cups flour
¾ cup sugar
12 TBSP butter (1 ½ sticks)
½ tsp baking powder
½ tsp. baking soda
¼ tsp. salt
¾ cup sour cream
1 egg lightly beaten
1 tsp. almond extract
Preheat oven to 350*. Spray with Pam a 9” spring form pan. In large bowl combine flour and sugar and cut in butter to the size of small peas. Remove 1 cup of these crumbs for the topping. To the remainder, add the remaining ingredients. Spread dough over the bottom of the pan and up the sides 2”. Dough should be ¾” thick.
Filling:
1~8 oz. pkg. cream cheese
¼ cup sugar
1 egg
½ cup raspberry jam (or apricot)
Cream the sugar and cheese together, add egg. Mix well. Pour over the dough. Carefully spoon jam over the cream cheese mixture.
Topping:
½ cup sliced almonds
Mix almonds with 1 cup of reserved crumbs. Sprinkle over the top of cake. Bake for 50-60 minutes. Cool in pan for 15 minutes. Remove sides of pan. Serve warm or cold. Refrigerate leftovers.
As I mentioned before I do not really like anything raspberry…but I love this coffee cake! I’m betting the apricot would be good too!

This looks so yummy! I don't have a spring form pan though. You have no idea how many things I haven't made because I don't have one of these pans. I seriously need to get one!
